Not-Hummus

I'm not usually a very picky eater, but there are two common foods that I refuse to eat, and one of those are chickpeas.

One evening my mother fancied some hummus, but I was eating at her and she decided to do something I would have liked too.

This is the spread that resulted, and it was so good that I stole the leftovers for a sandwich instead of preparing myself a bento for the next day.

Recipe

  • 200 g boiled white beans
  • 1 Tsp. extravirgin olive oil
  • 1 tsp. Dijon mustard
  • 2 Tsp. water or vegetables stock
  • some herbes de provence

Mix all the ingredients with a stick blender until you get an uniform paste. Serve on toasted slices of centre-south italian style bread.
