Valhalla's Potatoes

This simple recipe works great as a single-dish dinner for one. If you want to scale it for a few persons you will probably have to change the source of distraction below, but it should be a geeky one.

Recipe

For 1 person:

  • 2 mid-sized potatoes
  • 50 g unhealty source of proteins (e.g. sliced wienerls or diced "pancetta")
  • Too much extra virgin olive oil
  • Salt

Peel the potatoes wash them and start to slice them very thin, progressively growing as you get bored, up to about 1.5mm thick; put the potatoes in a low non-stick pan with a couple tablespoons of oil, add salt and cook at mid heat, stirring them to prevent sticking.

As soon as you find out that they are sticking anyway, add some oil, then add 2-3 tablespoons of water and a bit more salt; lower the heat a bit and leave them while you waste some time on the computer.

Suddenly remember about the potatoes, run to the kitchen and find them still raw; return on the computer: this step is very important; as soon as the potatoes are not obviously raw, taste a couple of the thinner ones.

Repeat a few times until the potatoes are almost done, then add the meat, raise the heat a bit and stir until about half of the potatoes are light brown. Serve and enjoy.
